Trying to remove the front axle from my 2005 America for the first time (and I am just learning to wrench). The right hand side (if you were sitting on the bike) takes a 12 mm hex bit. The left side takes a 18 mm hb. Which should I take unscrew (first?). Anything I should know about this? For example, I presume that both unscrew counterclockwise, right?

The LH hub bolt holds the axle assembly together. The RH fork leg clamps to the axle via the two pinch bolts. Left slacken then Right and disassemble.

When you come to bolt up I suggest you watch and digest a couple of the YouTube videos on fork alignment. You will be bolting up the axle assembly and then bouncing the suspension to settle the RH fork position on the axle before tightening the pinch bolts.
