What Spam ? I see no Spam…Haven’t seen Spam since my wedding reception buffet.

I did actually notice your option was very much more sofisicated than mine @andypandy .
But just as tasty.

 

Batter's fine by me, I just like the extra crunch you get with the panko breadcrumbs. Plus I put thyme, oregano, garlic powder and onion powder in with the mix. Sometimes chilli flakes and smoked paprika too. Makes it a bit more lively.
