Welcome to the family. Yes you have a nice machine there. You really just got to check the tappets and make sure your new carb is jetted properly. What electric's are you running points or electronic. If points make sure they are adjusted and set properly and all the bits are sound. Really is trial and error there but you will get it I am sure. Also make sure your coils are in good order.

You don't mention in your description whether or not you cleaned out - and sealed - the fuel tank. If the bike has sat around for a long while it's quite possible that rust on the inside of the tank is flaking off and blocking the inlet, and possibly the jets and passages, in the carb.? As it's a new carb it should be fairly easy to clear with carb cleaner aerosol and a straw.

If that's not the case, then you'll need to go back to basics - check for sparks, fuel and valve clearances then let us know what, if anything, you find.

A flat battery could be the cause if you have an electronic ignition fitted

 

As it was running yesterday I would be looking at Fuel and sparks as my 1st port of call. as previously said before.
I don't think the valve clearances would change that quickly to stop it running. but a loose tappet is a happy tappet on the old triumphs

 

Points can come loose , close up and she stops running ? ?
