I have alway worried about using my leather panniers for touring as they are fixed to the bike and completely insecure. I have just found and bought these which means you can load them up and take everything out easily at your destination, leaving just the empty panniers. I got these faux-leather throwovers for 85 quid on Louis-moto.co.uk.
